Cheesecake Bars

Wowzers! That’s my best description of Amber’s Cheesecake Bars because that is the first word that popped out of my mouth when I had one. Amber got this recipe handed down to her from her mom who makes them every year for Christmas.

Amber cut these into perfect, nibble sized bites. I can’t wait to have another piece of these tomorrow with a cup of coffee. Yum!

Apparently, Amber found a little sweetness to nibble on herself with Kenzie.

Ingredients

For Crust:

  • 2/3 cup butter
  • 2/3 cup brown sugar
  • 2 cups flour
  • ½ teaspoon salt
  • 1 cup chopped nuts (pecans or walnuts)

For Filling:

  • 1 pound of cream cheese (2 packages) room temperature
  • ½ cup granulated sugar
  • 2 eggs
  • 4 tablespoons lemon juice
  • 1 teaspoon vanilla

Directions

  1. Mix all crust ingredients together until well blended.
  2. Press about half of the crust on the bottom of a 13×9 cake pan. (Set aside the rest to be used for a crumble topping.)
  3. Bake at 350° for 12 minutes. Let cool slightly.
  4. Mix all filling ingredients together until very smooth and creamy.
  5. Pour over crust.
  6. Crumble the reserved crust mixture over top.
  7. Bake 350° for 25 minutes.
  8. Cool completely and cut into squares.

Store in refrigerator

 

 

 

 

Chocolate Chip Oreo Cookies

For two young ladies who claimed to not be bakers, they sure collaborated and came up with a great recipe to share at the cookie exchange. Every one loves the good ol’ chocolate chip cookie, but add in some Oreos and you have a winning combination.

Holly and Jill ran away with the prize for “Most Yummy” cookie. Well done ladies, it was quite delish!

Ingredients

    • 1 stick softened butter
    • 6 Tablespoons sugar
    • 6 Tablespoons brown sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 1 ¼ cup flour
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 11 broken pieces of Oreo Cookies
    • 1 cup chocolate chips

Directions

    • Preheat oven to 350 degrees F. Cream butter, and sugars until well combined. Add egg and vanilla until mixed well.
    • Place flour, baking soda and salt into a large bowl, stir to combine. Slowly add dry ingredients to wet ingredients then stir in Oreos and chocolate chips until just combined.
    • With a medium cookie scoop, scoop onto baking sheet. Bake for 10 minutes or until cooked, but still soft. Let cool on baking sheet for 3 minutes before transferring to cooling rack.
